OLYMPICS HOSPITALITY CENTRE
Smart Hospitality was the proud caterer for the Olympic Hospitality Centre (OHC) within the Olympic Park at the London 2012 Olympics, 27th July and 12th August 2012.
The OHC was the official venue for marketing partners' hospitality for London 2012, developed by the London Organising Committee for the Olympic Games (LOCOG). LOCOG's aim was to provide World class corporate hospitality to VVIPs, VIPs, visiting Heads of State, international employees, athletes and competition prize winner guests of the IOC and 10 major sponsors within their own bespoke suites; each was to have an ambience and catering offering tailored to their needs, timing and entertainment requirements. Hospitality would need to be delivered from 11am – 11pm daily and with a supporting 24-hour operation, as a variety of catering would be required throughout the day, from Champagne and canapé receptions during presentations, to buffet stations between events and formal dining options in the evenings.
HOW DID WE DELIVER IT? HERE'S HOW...
Infrastructure: We established a support infrastructure of a 2,000sqm production kitchen facility, with 12 finishing kitchens.
Menus: Devised by Angela Hartnett, our menus involved delivering over 100 dishes a day containing over 800 ingredients. A vast array of dishes were created to reflect themes (such as a quintessentially British theme for the Opening Ceremony, and Brazilian for the Closing Ceremony), as well as the international diversity of guests (we devised a very popular tapas menu); whilst always using purely British and ethical products. We worked closely with each client to deliver bespoke menus to impress their brand and culture on their guests; from an elegant 5 star restaurant at the IOC, to an American-themed feast for the Coca-Cola 'perfect serve' theme.

Provenance: In response to LOCOG's guidelines on ethical procurement, we developed a 'food vision response plan'; a seasonal offering with 100% provenance across all food and beverage, such as ensuring all fruit, vegetable, salads, meat and poultry were a minimum 'Red Tractor Assured'. We also developed a network of artisan suppliers, such as the Wapping sourdough company who make bread from an oven constructed of bricks reclaimed from the Thames.
Staffing & Service: We recruited and accredited over 2,000 staff members. To ensure optimum service and consistency, we developed a dedicated training programme setting out our standards of service, as well as health & safety, product familiarisation and event and client backgrounds. Every team member completed the programme, which was underpinned by incentive and vitalising schemes, including a Gold Ticket award scheme rewarding excellent service with an invite to a stunning wrap party, and hairdressers and make-up artists on site to ensure impeccable appearance at all times.
Sustainability: The Olympic Committee had aspirations to achieve 'low to zero' waste to landfill, hence we devised a specific waste minimisation strategy, from packaging removal to forecasting waste volumes to generate minimum waste possible.
